Tiger Ventures eighth-grade students showcased their creativity, teamwork, and culinary skills during the annual Healthy Food Truck Challenge.
Over the course of several months, students worked alongside Ann Supa from Cornell Cooperative Extension to learn how to create nutritious meals using ingredients commonly available through local food pantries. As part of the project, students developed valuable cooking and food preparation skills while exploring a variety of healthy recipes.
Working in teams, students designed five unique food truck concepts, complete with themed menus, branding, and truck displays. They then brought their ideas to life by preparing a signature recipe from their menu for staff members to sample.
Staff visitors toured the displays, tasted the students’ creations, and voted for their favorite food truck. Projects were evaluated on their ability to promote healthy eating, creativity and innovation, the connection between the truck design and menu, presentation, and overall appeal.
The challenge provided students with a hands-on opportunity to combine nutrition education, entrepreneurship, and teamwork while demonstrating the skills they developed throughout the year.
